Recipe using Cantal: Filo pastry with Cantal cheese and asparagus

Ingredients
  • 8 sheets filo pastry
  • 1 bunch asparagus
  • 250 g crème fraîche
  • 350 g Cantal (Jeune) cheese cut into cubes
  • salt
  • pepper
  • nutmeg
Preparation
  1. Peel the asparagus.
  2. Cook them in a large quantity of boiling salted water. When they are cooked, rinse them quickly under cold water.
  3. Cut them up, reserving the tips and a few stems.
  4. Bring the crème fraîche to the boil.
  5. Season with salt, pepper and nutmeg.
  6. Add to the cream 350 g Cantal cheese cut into cubes, and stir with a wooden spoon until smooth.
  7. Cook for 2 mins.
  8. Place the sheets of filo pastry two by two, one on top of the other.
  9. Place a few asparagus stems and some tips in the centre of each sheet with some of the hot cheese mixture.
  10. Fold the four corners of the pastry into the centre using a little water to seal them.
  11. Fry them quickly in a large frying pan with clarified butter or oil.
