Ingredients
  • 12 fresh eggs
  • white vinegar
  • 400 g Cantal (Entre-Deux) cheese
  • 500 g crème fraîche
  • salt
  • pepper
  • nutmeg
Preparation
  1. Poach the eggs in simmering water, with vinegar but no salt added, for approx 2 mins.
  2. Place the eggs in a buttered dish.
  3. Season the cream and reduce it to 2/3 of its quantity.
  4. Add the cheese.
  5. Place in hot oven to brown.

Conseils

The poached eggs can be served on fried croutons with a crunchy salad.
