- 12 fresh eggs
- white vinegar
- 400 g Cantal (Entre-Deux) cheese
- 500 g crème fraîche
- salt
- pepper
- nutmeg
- Poach the eggs in simmering water, with vinegar but no salt added, for approx 2 mins.
- Place the eggs in a buttered dish.
- Season the cream and reduce it to 2/3 of its quantity.
- Add the cheese.
- Place in hot oven to brown.
Conseils
The poached eggs can be served on fried croutons with a crunchy salad.
